This was a really tricky design from a ventilation perspective. As well as having a very small footprint, this kitchen also features fryers and a charcoal oven - all of which made this site very demanding when it came to extraction. The situation was further complicated by the fact that the design was governed by the position of the extract riser.
Our solution was to provide two different canopies - one at low level above the fryer, and one at high level above the charcoal oven. This had the added benefit of freeing up space for the ducting to connect to the riser and lowering the required extract rates too. To finish the extraction, we provided a UV Ozone dosing system and an ESP (electrostatic precipitator) unit for the removal of grease and smoke, as required by the local council for planning permission.
